Cream Cheese Stuffed Peppers
Over Labor Day we had dinner at my MIL for her birthday and my great nieces. My SIL, made stuffed banana peppers with cream cheese. This is now our family favorite.
You take banana peppers, cut the tops off and clean out the seeds. slice them down the middle. Cut the cream cheese and slice a thin slice and stuff in the pepper top with pepper jack or another favorite type of cheese. Broil for about 15-20 minutes till pepper is tender and cheese is melted.
Another way we enjoy these yummies stuff with sausage and top with cheese. Broil for about 15- 20 min.
We also have stuffed them with meat, black beans, salsa and rice and top with cheese. Cook the meat and beans and salsa and rice, heat till rice is completly cooked and then stuff away. Talk about yummy!
Bake at 350 degrees and bake till peppers as soft and tender about the cheese is melted.

The peppers sound wonderful! In New Mexico we stuffed all kinds of peppers with jack cheese and chicken and dipped them in egg whites beaten stiff to make a batter....then fried them golden brown....they were so good! It is good to hear what is going on with you. I've been swamped lately but finally coming out of the dark!
