Stuffed peppers
Here is a recipe that a friend of my sister-in-law gave us.
12 large banana peppers (May need more, I think this is what we used)
1 pound sausage
1 small onion
grated cheese
Cook sausage and sauté onion. Drain off grease. Stuff into pepper boats (cut and seed peppers, cut slit down peppers) and top with cheese. Broil for about 10 minutes. I think I will the next time bake them at 325 degrees till cheese is melted. My cheese cooked off and I think it would be a little better baked and also I think the peppers would be a little more tender. Other then that it is very good. This I believe would also be good with jalapenos. We may try this also. Enjoy!
