Making Oatmeal Wheat Bread & Crockpot Granola with my Kitchen Sprite

Here is my kitchen sprite ready to help me after she has her breakfast.

 

 

Today, I first made some crockpot granola

 

5cup old fashioned oatmeal

1/2 cup honey

1/4 cup oil

1 tsp salt

Desired dried fruit/nuts

(we used commodity issued nut/date mix)

 

Put in your cockpot on low heat and 'bake' for 3 hours stiring occasionally.

 

 

After 3 hours in the crockpot, spread out on 2 cookie sheets to cool.

Then store in containers with easy access.

 

 


Next, we made some Oatmeal Wheat Bread by hand

(no mixer involved)

 

PLEASE NOTE THIS IS HIGH ALTITUDE BREAD

(OVER 7200FT)

 

 

In a large bowl I put in

 

1 1/2 cups hot tap water

4 Tblsp dough enhancer

1 Tblsp sugar

1 Tblsp yeast

1 Tsp salt

 

Mix by hand (I actually use my hand through out the process)

Let sit for 5-10 min. until you see visible bubbles.

 

 

 

Add, 1 cup Oatmeal and mix.  Add 2 cups wheat flour and mix by hand until it starts to clump together,  I continue kneeding the bread int he bowl so that I don't have to flour my counter and make a bigger mess.  When you have kneeded the dough for about 10 min. remove it from the bowl and wash the bowl in hot water.  Oil the bowl and put the dough back in the bowl turning the dough to coat it witht he oil.  Cover and let the dough rise for about 1 hour.

 

 

During the rising period you will have plenty of time clean up your mess.

 

 

 

When the rising period is up, punch down the down and remove it from the bowl and then roll it out in to an oblong shape and then roll it up to fit your pan.  I like to use the new cylicone baking pans since the breads will just pop right out after baking.

 

 

Once in the pan I like to slice the top to make it beautiful.  I do that by making a slit down the center and then again 3 times diagonally.

 

 

Again, cover and let rise for about 20 min.  While rising preheat oven to 375*.

 

 

When 2nd rise has finished put on the middle of the oven rack.  Bake for 30min

 

 

Well, the bread is all done and it is so good.  I had to have a slice with my cup of peach tea.
