Chili and Cornbread

I have been busy making homemade chili with elk meat.

 

 

Saute' 1 medium onion and add 2 pounds of ground elk burger.  Cook until burger is browned.  No need to drain because elk is so lean there is very little grease.

 

Add: 1 cans of tomato sauce, 2 cans of diced tomatos and 3 cans of kidney beans (I like to make mine from scratch and use my pressure cooker to cook the beans).

 

Heat until all ingredients are hot.  Add chili spices of choice.

 

Simmer for 1-2 hours

 

 

While chili is simmering mix up your favorite cornbread batter and cook in a 9" cast iron skillet for an authentic look.  I like to add a can of whole kernal corn for more texture.

Love chili and cornbread. Never had it with elk meat though. Love the cast iron too!
