
Yesterday was a Woman of the Dirt gathering and I had to work. It would've been easy for me to come home and nap or feel sorry for myself because I couldn't make it, but I had a 5 gallon bucket of apples from my tree, so I canned 14 quarts of apple pie filling. I found the recipe to be a little short on liquid. I was not able to get 7 quarts out of the recipe. I also made the mistake of putting too much in the jars the first time and they over flowed. I had to process the first batch twice. Then I ran out of sugar for the second batch and having the apples all ready cut up, I wasn't waiting! I ran to town for sugar! I used flour in some and cornstarch in another as the thickener. I see the cornstarch jars are almost jelled, but will thin out when reheated for pies. The flour jars are much runnier.
I hope the WOTD had a great gathering. The reason I hate to miss, aside from the fact that we haven't gathered since early June, is that I learn so much at each gathering. My head is generally spinning with information and ideas after I leave. I will have to wait another month for that rush!
Also, if you don't own an apple peeler/corer/slicer, invest in one! They are worth their weight in gold! |
