Creamy Onion and Potato Soup

After Connie reposted Carla's recipe for onion bread, I thought this would go good with it. A midwife I know used to make it and it was delicious. She put the cheese in hers. She gave me the recipe years ago but I didn't make it right away and it was misplaced. I found it last night, so I haven't actually made it myself. If you make it let me know how it turns out!

 

2     tablespoons margarine

2     tablespoons all purpose flour

1     large onion; diced

1     glove garlic; pressed

2     (14 1/2) oz cans chicken broth

3     large potatoes; cubed

1/8  teaspoon salt

1/4  teaspoon pepper

1     cup milk; or cheese to taste

 

Melt margarine and whisk in flour. Add onion and garlic and cook until transparent. Add broth, potatoes, salt and pepper. Cook until potatoes are tender. If desired, puree soup in blender. Add 1 cup milk or cheese to suit your taste.

I have one about the same, but no garlic and no flour ... I think I'm sorry I've started spaghetti tonight! Hope tomorrow is a good soup night!

And my cheesy potato dumpling soup is coming up next.

Thank you for the nice comment that you left on my blog. I'm glad you're enjoying it!! Also, one of my husband's favorites is potato soup. I think I'll have to try this one out! Also again, I read in your blog that you're a smoker. Me too, it's like a dirty little secret-huh? I tried to quit (again) and wound up in the bathtub crying (after eating the entire house). I figured that it wasn't the right time, but I shall try a different approach soon! Good for you for making changes in the healthy direction--I don't like green tea either!!
