Making Ice "Cream" and making Ice Cream :)
OK, here is my non dairy ice "cream" adventure! I made vanilla almond utilizing some advice from a non dairy reader of my blog. I will say for a nice non-dairy treat this is not too bad. It is not as creamy as ice cream made with whole cream or half n half, but creamier than ice milk. I think the coconut milk helped to give it a richer texture. I have a new appreciation for those who are lactose intolerant.. it is not an easy thing. I am glad that I am slowly getting better and able to handle some dairy, but milk is still a no, no.. So this little treat was very nice. The kids even said it was not too bad! 
Non Dairy Vanilla Almond Ice “Cream”

1 can (14 to 15oz size) coconut milk
3 cups almond milk
1 cup cane juice crystals
2 t real vanilla
Combine all ingredients and pour into ice cream maker and make according to manufacturers directions.
They did not mind the non dairy dessert, but wanted some real ice cream themselves. So Emily made some Mint Chocolate Chip Ice Cream.
Mint Chocolate Chip Ice Cream

2 cups whole milk
2 cups half n half or whole cream
1 cup cane juice crystals
1 t real vanilla
1 t peppermint extract
1 cup grain sweetened chocolate chips, chopped very small
Mix ingredients together well and pour into your ice cream container. Follow manufacturer’s directions.
This makes about 2 qts.
Optional: a drop or three or green food coloring it you want it to look like what you buy in the store.

If you are interested in more non-dairy "ice creams" there is a book titled "Vice Cream". I haven't tried any of the recipes yet, but they look good.
