Central American Tubers

The quequisque (kay keys kay) is a popular Central American tuber, one you will find in many soups in this part of the world. Being a Yankee and firmly established in my Irish roots, as well as a serious tater lover, I felt this cousin tuber was being underused. Seemed like time for experiments.

Now that's a pretty tater chip!

Wow those are pretty chips, just want to grab a hand full right now. Market those babies : )

These chips are very buttery tasting and I can't make 'em as fast as I can eat 'em! In fact, that's what I'll be doing a good bit today, making them not eating them. I've organized a tailgate party at this weekend's american-style football game at the Ave Maria College in San Marcos. Gotta make LOTS of chips for that crowd!
