We've been baking

Yesterday, I had the kids start on the Toy Reduction of the toy room - I would like to call it a Family Room, but really it is a home for the ginormous stash of toys that my children have ... and the majority of them they don't even play with!!!
So, today, I asked them to continue on with the toy reduction and I must say that they are doing really well at it. We did however take a break from it and turned our attention to some baking that needed to be done.
Tomorrow is Mug Up and the kids were hoping that they could have some cookies (or other sweets) to go in their lunches. So, all work on the toy room stopped and we donned on our aprons and we each started baking something. Josh made a loaf of Gluten Free bread (he used the last of the loaf for his sandwich in his lunch and he actually realized that he needed another loaf to replace it, yayyyyyyy!!!!!!!!!), Charlotte made a batch of Fudge (she found the recipe in her Daring Book for Girls book) and I'm making cookies. I actually haven't tried this recipe out yet, but it sounds very good and I like the fact that I can add things to the recipe - so I'm think of adding some Craisins and maybe some Chocolate Chips, but I may change my mind, lol. The kids even have their lunches pretty much all made (their just waiting for the cookies to be finished).
Basic Cookies
1/2 cup shortening
3/4 cup brown sugar
2 eggs, beaten
1 tsp vanilla
1 cup white rice flour
1/2 tsp baking soda
1/2 tsp salt
1/2 cup nuts, raisins or chocolate chips
- Preheat oven to 350˚F. Grease cookie sheet. Cream shortening with sugar, then add eggs and vanilla and mix well. Mix in sifted dry ingredients, then add nuts, raisins, or chocolate chips. Drop on greased cookie sheet. Bake for 10 - 15 minutes.

Blah kind of day

Today feels like winter again - could be because it is cold and snowy outside, lol. Usually when it is chilly outside I make up a big pot of stoup (Don says that it is to thick to be soup but not thick enough to be stew, so he calls it stoup), today is no exception .... in the big Crockpot I have made some taco soup. I kind of stumbled upon this recipe one night when I needed something really quick for supper (it is good if it can simmer all day, but it doesn't need to). Here's what I did:
1 lg can of diced tomatoes with juice
1 lg can of chickpeas with juice
1 can of black beans (you can use kidney beans if you like) with juice
1 can of sliced mushrooms with juice
1 to 2 packages of taco seasoning
1 1b fried hamburger
- combine all ingredients in a large pot and let simmer all day if you can.
- serve with taco chips, sour cream and grated cheese.
Really easy to make and I always have these ingredients in my cupboard and as an added bonus - the kids seem to like it, lol.
Wednesday we went to a birthday party for Charlotte's friend, when we left her house Charlotte stayed for a sleepover and her friends brother came for a sleepover at our house. I can only hope that Charlotte has been as well behaved and helpful as Jordan has been (and I'm not just saying that because his mom reads my blog either, lol).
Well, I better get going since I need to straighten up my livingroom - I did some rearranging yesterday and still need to get things put back in there places.

Celebrating a Birthday

Today is Don's birthday - I won't say how young he is .... just that his age now ends in a 0 but it is more than 30 and less than 50, lol.
As per Don's request, we have a very quiet evening planned ... just the four of us - I think it will be really nice. The kids have helped to plan his birthday dinner and I am noticing a definite 'cheesy' theme happening, here's what we are having:
- Cheese Chicken - this is simply chicken that has been cooked in the oven but instead of using Shake n' Bake, I sprinkle it with a Taco seasoning mix that I made up. Once it is cooked I'll put strips of cheddar cheese on the chicken and put it back in the oven until it is melted.
- Cheesy Slowcooker Potatoes - I found this recipe in one of my new cookbooks, basically you dice up a bunch of potatoes (it actually calls for one bag of shredded hashbrowns, but Josh can't eat those) to almost fill the crock (I am using our 6qt slowcooker). Sprinkle with dehydrated flakes of onion, then combine 2 cans of cheese soup and 1 can of evaporated milk - pour this over the potatoes and onions. Put the lid on and cook on Low for 6 to 8 hours.
- For our vegetable tonight, Charlotte requested Cream Corn because it is Don's favorite.
- Dessert tonight is a Gluten Free Cheesecake - take one package of Gluten Free Vanilla instant pudding mix, 1 package of Cream Cheese and 2 cups of milk. Mix the pudding and the milk then blend in the cream cheese using a hand mixer. Once mixed, spread it in a small cake pan (or individual dessert cups), let it set in the fridge for about 4 hours. Spread on your favorite fruit pie filling (we are using Blueberry - Don's favorite) and put it back in the fridge to chill a bit before serving. You could probably put the pie filling on before you put it in the fridge for the 4 hours ... totally up to however you want to do it.
So ...... anyone else see the 'cheese' theme? rofl

Cinnamon Rounds
≈ 1 1/2 cup margarine
≈ 1 cup granulated sugar
≈ 1 egg, beaten
≈ 1 tsp vanilla
≈ 1/2 cup brown rice flour
≈ 1/2 cup tapioca starch
≈ 1/4 cup soya flour
≈ 1 1/2 teaspoons baking powder
≈ 1/4 teaspoon salt
≈ 2 tsp cinnamon
≈ 1/2 cup finely chopped nuts
* Heat oven to 375˚F. Grease baking sheets
* Cream margarine and sugar together. Add egg and vanilla and blend well.
* Sift together flours, starch baking powder, salt and 1 tsp cinnamon. Add to creamed mixture.
* Mold the mixture using about 1 Tbsp into balls and roll in a mixture of the chopped nuts and remaining 1 tsp cinnamon.
* Place on prepared baking sheets about 2 inches apart.
* Bake for 15 minutes. Remove immediately from baking sheets.
* Yields about 2 1/2 dozen cookies.
