Today
Posted in Family Life
We went grocery shopping the other day and picked up a big bag of Royal Gala apples - today I decided to surprise the kids and I put a bunch of them in the dehydrator. When Charlotte was in public school that is the only way I could get her to eat apples, she literally could not stand them if I just handed her an apple to eat (or even if I cut it up), she's better now and will actually eat an apple if it is cut up .... just eating a whole apple without cutting it up, now that's still a difficult feat for her, lol.
I also made a loaf of Gluten Free bread for Josh today. We are going over to my Mom's tomorrow to help clean out her garage so I need to bring some food down for Josh. It isn't that Mom won't make things for him as well, it's just a whole lot easier (especially when she is feeding a crowd) to have me bring things down for him.
I still haven't been feeling the greatest, I'm getting these wicked headaches and then feel sick to my stomach - I hope it stops soon, I feel like I'm living on Tylenol. Since I haven't been feeling the greatest, the kids had a very low key day for school today - they played some board games (Pay Day, Are You Smarter Than A 5th Grader, Scrabble), went outside and played baseball and then came in and played Brain Age and Brain Age 2 on their Nintendo DS.
It's a really nice day out today, I think I'm going to see if Don will do some BBQing.

Cinnamon Rounds
≈ 1 1/2 cup margarine
≈ 1 cup granulated sugar
≈ 1 egg, beaten
≈ 1 tsp vanilla
≈ 1/2 cup brown rice flour
≈ 1/2 cup tapioca starch
≈ 1/4 cup soya flour
≈ 1 1/2 teaspoons baking powder
≈ 1/4 teaspoon salt
≈ 2 tsp cinnamon
≈ 1/2 cup finely chopped nuts
* Heat oven to 375˚F. Grease baking sheets
* Cream margarine and sugar together. Add egg and vanilla and blend well.
* Sift together flours, starch baking powder, salt and 1 tsp cinnamon. Add to creamed mixture.
* Mold the mixture using about 1 Tbsp into balls and roll in a mixture of the chopped nuts and remaining 1 tsp cinnamon.
* Place on prepared baking sheets about 2 inches apart.
* Bake for 15 minutes. Remove immediately from baking sheets.
* Yields about 2 1/2 dozen cookies.
