Celebrating a Birthday

Today is Don's birthday - I won't say how young he is .... just that his age now ends in a 0 but it is more than 30 and less than 50, lol.
As per Don's request, we have a very quiet evening planned ... just the four of us - I think it will be really nice. The kids have helped to plan his birthday dinner and I am noticing a definite 'cheesy' theme happening, here's what we are having:
- Cheese Chicken - this is simply chicken that has been cooked in the oven but instead of using Shake n' Bake, I sprinkle it with a Taco seasoning mix that I made up. Once it is cooked I'll put strips of cheddar cheese on the chicken and put it back in the oven until it is melted.
- Cheesy Slowcooker Potatoes - I found this recipe in one of my new cookbooks, basically you dice up a bunch of potatoes (it actually calls for one bag of shredded hashbrowns, but Josh can't eat those) to almost fill the crock (I am using our 6qt slowcooker). Sprinkle with dehydrated flakes of onion, then combine 2 cans of cheese soup and 1 can of evaporated milk - pour this over the potatoes and onions. Put the lid on and cook on Low for 6 to 8 hours.
- For our vegetable tonight, Charlotte requested Cream Corn because it is Don's favorite.
- Dessert tonight is a Gluten Free Cheesecake - take one package of Gluten Free Vanilla instant pudding mix, 1 package of Cream Cheese and 2 cups of milk. Mix the pudding and the milk then blend in the cream cheese using a hand mixer. Once mixed, spread it in a small cake pan (or individual dessert cups), let it set in the fridge for about 4 hours. Spread on your favorite fruit pie filling (we are using Blueberry - Don's favorite) and put it back in the fridge to chill a bit before serving. You could probably put the pie filling on before you put it in the fridge for the 4 hours ... totally up to however you want to do it.
So ...... anyone else see the 'cheese' theme? rofl
