Baking again

Not really sure what has come over me, but I have been doing a lot of baking lately - I'm sure that my family is not going to question this, lol.
Have you ever made Cake Mix Cookies? I don't usually have store bought cake mixes in my house, even before Josh went Gluten Free. So, what I did was have a friend, that uses cake mixes, measure out how much there was in a box - then when I would make a cake mix from scratch, I would measure to see if it added up to that (if I remember correctly, most of the homemade cakes are pretty close to what the store bought ones are). Anyway, today I decided that I would make some chocolate cookies with Skor chips in them. First, I'll share the recipe for the cookies and then for the cake mix that I made them from (just a side note - these spread out a lot):
Cake Mix Cookies
1 1/2 cups flour (I used a G.F. flour mix)
1/4 tsp salt
2 tsp baking soda
3 Tbsp cocoa
1 cup sugar
1 tsp vanilla
1/2 - 3/4 cup oil (I use olive oil)
2 eggs
1 bag Skor chips
- Mix all of the above ingredients as you would for cookies. Spoon dough onto baking sheet and cook for 9 to 10 minutes. Take them out of the oven and let them 'rest' on the baking sheet for 3 minutes. Transfer them to a cooling rack - they will harden up as they cool.
Here is the cake recipe that I used for these delicious cookies (I really don't like the name of this cake, but it is a very easy and wonderful cake):
Lazy Wife Cake
1 1/2 cups flour
1/4 tsp salt
2 tsp baking soda
3 Tbsp cocoa
1 cup sugar
1 tsp vanilla
7 Tbsp oil
1 Tbsp vinegar
1 cup cold water
- Sift the dry ingredients into a 9" x 9" ungreased cake pan. Mix them with a fork. Make three holes in this mixture: into one put the vanilla, into the next the oil, and into the third the vinegar. Pour over all of this the cold water. Mix these ingredients with a fork, but do not beat them. Bake the batter at 350˚F for 25 to 30 minutes or until done.
After you bake this cake, you might want to use the following frosting to top it off (if you double the recipe for the cake - double the recipe for the icing):
Cocoa Icing
1/2 cup sugar
2 tsp cocoa
1 Tbsp cornstarch
1/2 cup boiling water
1 Tbsp butter
1 tsp vanilla
- Boil the sugar, cocoa, cornstarch and water until thick, then add the butter and vanilla. Pour over cake (while it is still in the cake pan) and spread it out so cover the corners.
This is a really nice icing for cakes - it isn't too sweet. When I would make this cake and frost it with this icing, a lot of people from Church would comment on how good it was, and then request the recipe, lol.

Iced Coffee Syrup
≈ coffee
≈ water
≈ sugar
***IMPORTANT***: you need a percolator style coffee pot to make this.
DO NOT use a drip style coffee maker to make this syrup!!!!!
* Make one pot of coffee, then discard the grounds.
* Add fresh grounds, percolate again, with the coffee as liquid, not fresh water.
* Do this three times.
* To the finished coffee mixture, add one half the amount of sugar (if you end up with 3 cups coffee mixture, add 1 1/2 cups sugar).
* Mix until sugar is completely dissolved.
* To use: add 2 - 3 tablespoons of syrup to a 10 oz glass of milk, stir to mix and enjoy.
