Recipe Friday - Butter Tart Muffins

I got this recipe from my Mom, she told me that Dad used to make these and that they are sooooooooo good. I tried them last night and I totally agree with her, these are amazing.
Butter Tart Muffins
1 1/2 cups raisins
3/4 cup sugar
1/2 cup butter, cut into chunks
2 eggs, beaten
1/2 cup milk
1 tsp vanilla
1 1/2 cups flour
2 tsp baking powder
1 tsp baking soda
1 pinch salt
1/2 cup walnuts, chopped (optional)
1/3 cup maple syrup
- Place raisins, sugar, butter, eggs, milk and vanilla in a large saucepan and cook over medium heat, stirring frequently, until mixture is hot, slightly thickened and just beginning to bubble, about 4 to 5 minutes. Cool slightly, uncovered in the fridge, while continuing with recipe.
- Preheat oven to 375˚F (190˚C). Grease 12 muffin cups or insert paper muffin cups. Stir flour with baking powder, baking soda and salt in a large mixing bowl. Make a well in center and pour in warm raisin mixture, stirring just until combined. Stir in nuts until evenly mixed.
- Spoon batter into muffin cups. Bake in 375˚F oven until golden and a cake tester inserted into centre of muffin comes out clean, from 15 to 17 minutes. Remove from oven and immediately pour about 1 teaspoon syrup over top of each muffin. Cool in cups for 10 minutes, then turn out onto a rack. Tastes best served warm.

Iced Coffee Syrup
≈ coffee
≈ water
≈ sugar
***IMPORTANT***: you need a percolator style coffee pot to make this.
DO NOT use a drip style coffee maker to make this syrup!!!!!
* Make one pot of coffee, then discard the grounds.
* Add fresh grounds, percolate again, with the coffee as liquid, not fresh water.
* Do this three times.
* To the finished coffee mixture, add one half the amount of sugar (if you end up with 3 cups coffee mixture, add 1 1/2 cups sugar).
* Mix until sugar is completely dissolved.
* To use: add 2 - 3 tablespoons of syrup to a 10 oz glass of milk, stir to mix and enjoy.
