Our day so far

Is any one else finally having summer where they live? The past couple of days we have been having gorgeous weather - the kids are even out using their bicycles and scooter. Jake has been loving laying out on the back deck, basking in the sunshine. Today we had a regular day, for us. We got our schoolwork all done and I even managed to get some cookies made. I had originally planned on getting a loaf of bread made for Josh so that we could take some of it with us on the cattle drive - major stumbling block to this plan .... I didn't have enough brown rice flour. So, I know have to wait until Don gets home so that I can make up the bread mix and then get one loaf in the bread machine. The cookies that I made were the Maggie's Camper Specials - I added a package Skor chips along with a package of white & milk chocolate swirl chips. They taste sooooooooo good. I like this recipe because it makes enough to fill the cookie jar and have some to freeze to enjoy later. Before I made the cookies, I had to make up a batch of Gluten Free Baking Mix - the pail that I store the mix in was really low making this a priority before any baking was done today. We still have a few more things to get packed into the camper before we go down for the cattle drive tomorrow night (we park the camper in the driveway of our friends and sleep in it - we can also take down a lot more stuff with us). The kids have both got their suitcases packed - I had to tell them a couple of times to put their pillows back on their beds so that they could use them tonight, lol. Don and I still need to pack our bags and get them put in the camper, as well as putting the bedding in there for us (the kids will be sleeping in the house with their best friends). Some things will need to wait until tomorrow to be packed - like Jake's kennel, he is going to be absolutely thrilled to be going for a truck ride, lol. |
