Recipe Friday - Chai Tea Concentrate
Posted in Recipes
Well, it's that time of the week again. I really like this recipe, I really like the fact that this recipe allows me to enjoy a cup of Chai Tea in a fraction of the time that the 'traditional' recipes take.
Chai Tea Concentrate
1 tsp ground cardamom
1 tsp granulated sugar
1/2 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground nutmeg
1 (14 oz) can sweetened condensed milk
Mix the spices and condensed milk thoroughly. Refrigerate at least 24 hours before using, and store in refrigerator.
To use, brew a strong black tea. Stir in 1/2 to 2 heaping teaspoons of Chai concentrate mix per cup of freshly steeped tea.
When I make this recipe, I like to store it in a squirt type bottle so that it is easier to measure out how much you are adding to your tea.

Thanks for sharing! That is a favorite tea of mine. How long can you keep this? I noticed the canned milk that is why I'm asking..Thanks haflinger
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
I just did a search on Google and this is what I found out:
How long can I store opened condensed milk cans in the fridge? Is it possible to freeze it for longer storage?
Alan Barre
Even though milk is perishable, storing it properly will preserve its quality and freshness. Use the guidelines below to get full benefits from the milk you buy.
First of all, in the store check the “best before”-date on the label of the milk product to ensure that you are buying the freshest milk available.
The sweetened condensed milk conditioned in a metal or plastic container if unopened can be stored at room temperature and the shelf life is about 6 month from the manufacturing date. The preservation of the milk is obtained through heat treatment (85-90 °C), condensation, increased sugar content and the air-tightness of the package. The benefits of this treatment include totally destroying osmophilic and thermophilic microorganisms and inactivating lipases and proteases, which decreases fat separation and inhibits oxidative changes.
Opened canned milk should be immediately transferred to a clean glass or plastic container, covered and stored in the refrigerator. It should be used within 3 weeks of opening. If you don’t consume the opened milk during these weeks, it is possible to freeze it (the earlier the better). The storage time of frozen milk at –18 °C amounts approximately 3 months. For reusing defrost milk in the refrigerator over night. If it contains a lot of fat, it is important when defrosted to give it a good shake to remix the fatty and watery parts.
Iced Coffee Syrup
≈ coffee
≈ water
≈ sugar
***IMPORTANT***: you need a percolator style coffee pot to make this.
DO NOT use a drip style coffee maker to make this syrup!!!!!
* Make one pot of coffee, then discard the grounds.
* Add fresh grounds, percolate again, with the coffee as liquid, not fresh water.
* Do this three times.
* To the finished coffee mixture, add one half the amount of sugar (if you end up with 3 cups coffee mixture, add 1 1/2 cups sugar).
* Mix until sugar is completely dissolved.
* To use: add 2 - 3 tablespoons of syrup to a 10 oz glass of milk, stir to mix and enjoy.
