Recipe to share

I know it isn't Recipe Friday, but I tried this recipe today and both the kids really liked it. I can't remember where it is that I originally got the recipe, so I hope that the person that gave it to me won't mind me sharing it with all of you, lol. I am actually going to share two recipes with you today, the first one is for a G.F. Baking Mix that you can use in place of regular flour - I have only done that in small batches (like 1 cup of G.F. Baking Mix instead of 1 cup white flour). Gluten Free Baking Mix
3 cups white rice flour 1 cup brown rice flour 2 cups potato starch 1 cup cornstarch 1 cup soya flour Sift and then measure each amount of flour and starch. Combine well and store in an airtight container in a cool, dry place. ≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈≈ Cornmeal Cookies 1/2 cup butter 2/3 cup sugar 1 egg 1 teaspoon lemon extract 1/2 cup cornmeal (I used yellow) 1 teaspoon baking powder 1/4 teaspoon salt 1 cup G.F. Baking Mix 1/2 cup raisins Mix together butter and sugar until creamy. Blend in the egg and lemon extract. In a separate bowl, combine the cornmeal, baking powder, salt and flour. Add the flour mixture to the butter mixture. Mix well. Stir in the raisins. Drop batter by teaspoons onto a lightly greased baking sheet. Bake at 375˚F for 12 to 14 minutes or until bottom of cookies are lightly browned. Remove from oven and let the cookies cool for a minute before removing from baking sheet. ***NOTE: You can use regular white flour in this recipe instead of the G.F. Baking Mix*** |
