Looking for a recipe

I am need of your help, I am looking for a recipe for tortilla's (preferably without wheat or oat flour in it), that is similar to this one:
Bean Flour Tortilla's
1/3 cup light bean flour
1/2 cup cornstarch
2 Tablespoons tapioca flour
1/2 teaspoon salt
2 eggs or 3 egg whites, or 1/2 cup liquid egg substitute
1 1/2 cups water
Oil for brushing skillet
- In a medium bowl, place the bean flour, cornstarch, tapioca flour, and salt. Whisk together. Add the eggs and beat together until smooth. Slowly beat in the water. Let rest in the fridge for at least 20 minutes. Heat a 9" skillet or frypan over high heat, brushing with oil. Be sure it is hot enough for water to dance on the surface before starting to cook the tortillas. Spoon in about 4 tablespoons of batter or enough to cover the bottom of the skillet. Cook until the bottom of the tortilla is golden brown and the edges curl and the top seems dry, Turn and barely cook the other side.
The reason that I am looking for a recipe similar to this one is because I can't get any bean flour in the small town where I live. So if any of you could share either a recipe or a link with me, so that I can make this style of tortilla, I would be very very grateful.

Hey there. I just stumbled across this recipe on someone else's blog but haven't tried it yet. But here it is. It sounds good.
6 cups whole wheat flour (preferably freshly ground)
2 cups cold filtered water
1 1/2 teaspoons non-aluminum baking powder
1 1/2 teaspoons sea salt
1/2 cup extra virgin olive oil
extra virgin olive oil or olive oil spray for frying
In bowl of mixer, combine flour, baking powder, and salt. Turn mixer on dough setting and add oil. Add water gradually until mixture cleans sides of bowl and forms ball in center of bowl. Let the machine knead the dough for 2 minutes. Remove dough. Divide into 32 parts for small tortillas or 24 parts for large tortillas. Roll each part into a ball and spread on a cookie sheet. Spray with oil and cover tightly with plastic wrap. Let rest 1 hour.
Heat a flat cast iron frying pan over medium heat and add a small amount of oil. Oil a clean, flat work surface, such as a countertop. With an oiled rolling pin, roll out one ball of dough into a circle that is approximately 1/8" thick, or your desired thickness. Place rolled out tortilla in the pan. Let it cook for about 25 seconds or until there are several bubbles in the dough. Flip the tortilla with a spatula and cook the other side for another 15 to 25 seconds, or until the bubbles are browned*. Remove tortilla from pan and place between towels to stay warm and moist. Meanwhile, roll out the next tortilla. Repeat until all of the balls have been rolled out and cooked. Add oil to pan and/or rolling pin as needed. Store in a zipper seal freezer bag in refrigerator or freezer.
*Adjust heat or cooking times to account for your stove, pan, or thickness of tortilla.

If you are looking for flour tortilla's this is how I make mine..
Large bowl all purpose flour just dump some in and take a large spoon shortening pinch of salt 1-2 tsp of baking powder depends how much flour you put in and add warm water.. Mix it up really good.. By touching it you can tell if it needs more flour or water.
The flour depends on how many you want to make. I hope I helped you some..If you need more help just send me a private message..haflinger

all you need for bean flour is powdered dried beans. just grind them up into as fine a powder as you can get. it will work.

i have a vita-mix which grinds just about anything; (just don't grind a wooden tamper stick in it. i did that one time. ugh). you might try an old coffee grinder like laura ingalls wilder's mother used to make long winter bread. other than that i'm not sure. ask your neighbors or ask around town. i don't know what kind of things they got up there to grind stuff with. i guess what ever will grind whole wheat berries will work too. that's what i do. thanks for being so nice to me.

Thanks so much for all of the info. =) I have a Kitchen Aid Stand Mixer, do you think that the Grain Mill attachment would work for that? I could also just invest in an older style coffee grinder like you suggested (this could give my husband an excuse to order from Lee Valley, lol) and it would probably be the least expensive route to go. Thanks again. =)

Iced Coffee Syrup
≈ coffee
≈ water
≈ sugar
***IMPORTANT***: you need a percolator style coffee pot to make this.
DO NOT use a drip style coffee maker to make this syrup!!!!!
* Make one pot of coffee, then discard the grounds.
* Add fresh grounds, percolate again, with the coffee as liquid, not fresh water.
* Do this three times.
* To the finished coffee mixture, add one half the amount of sugar (if you end up with 3 cups coffee mixture, add 1 1/2 cups sugar).
* Mix until sugar is completely dissolved.
* To use: add 2 - 3 tablespoons of syrup to a 10 oz glass of milk, stir to mix and enjoy.
