Recipe from an Old-Time Homesteader
I just finished reading a book called Montana Homesteaders - Reflections and Recipes. I wanted to be sure to save a recipe listed for whole wheat rolls and thought you might enjoy it too.
I plan to try them when the weather is cooler, like in September!
Whole Wheat Rolls
Makes 4 dozen dinner rolls or 30 hamburger buns.
3 pkgs. yeast
1/2 cup warm water
Set this aside.
Scald: 1-3/4 cups milk, 2 tsp salt, 3/4 cups sugar, 3 Tbsp. shortening. Add: 2 cups unbleached flour. Beat well.
When lukewarm, add yeast mixture, 3 eggs and beat well. Add 3-1/2 cups whole wheat flour and beat well. Add 3 more cups whole wheat flour and mix until dough is stiff. Knead till smooth.
Place in greased bowl. Turn dough to grease top and cover and place in refrigerator. Will keep 3 days. When buns or rolls are desired, take dough out of refrigerator and form into desired shapes. Let rise about 2 hours or until double in bulk. Bake until done about 20 min. at 325 degrees. Brush tops with butter.
I think the thing about this recipe that is find most appealing is that it will make 30 hamburger buns. I have been wanting to make burger buns and will want to make alot of them and freeze them.
Today has been a good work day at our house. I have been busy putting a coat of oil based primer on the trim on two sides of the house. I've also been getting the front of the house ready to paint.
The temperature has been 95 degrees, but there has been a bit of a breeze and I've mostly been in the shade, so it hasn't been too bad. I just got out of the shower and that really helps.
Maria will be done working at the Drive-In soon. She and Jonathan are going to Great Falls to spend the night with their aunt and grandma. David and I will go out to dinner to celebrate our 26th anniversary, which was in June. You know how it is.....You celebrate when you can.
He and Jonathan have been doing some building in the garage, which is nice and cool, but they are still somewhat hot and sweaty too. It's hard to avoid on such a warm summer day.
Fortunately on the hottest of days, the night time temperatures are around 60 degrees, which makes the nights and mornings very pleasant. On the days when the temps are 90 degrees or lower, the nighttime temps are a very comfortable 54 degrees and sometimes in the high 40s. I love it!

sounds like a very interesting book, did you get it from the library? I looked at amazon and they have one copy for 53.00 and I believe that was for a used copy.
I guess I will be looking for it at our little library.

your weather sounds great - at least gets cool in the night & I know your humidity isn't like it is here. I'm thankful for air-conditioning. Actually there are only 2 stitches in knitting - knit & purl, so you already know how to knit! : ) jill
P.S. I forgot to say thanks for the idea of asking the county extension agent. My kids took a gardening class one summer from them - they are close to us - I'll stop by & see if they have any information on herbs. have a great day!!

Sounds like an interesting book. I copied the recipe for the buns and when our weather cools down, want to try it!

The book sounds great! We are headed to Montana next week, but I, too, will wait and make those rolls/buns when it is cooler.
