Comfort Food
On Saturday I tried a new recipe that uses hamburger in a different way. It's an easy entree that I thought you might enjoy trying.
Salisbury Steak
one 10-3/4 oz. can condensed golden mushroom soup
1-1/2 lbs. ground beef
1/2 cup dry bread or cracker crumbs
1/2 tsp salt
1/8 tsp pepper
1 onion, finely chopped
1 egg, slightly beaten
1/3 cup water
In medium bowl, combine one-quarter of the soup with remaining ingredients, except water. Mix well. Shape into 6 patties; arrange in single layer in 9x13 inch baking dish. Bake uncovered at 350 degrees for 30 minutes. Skim off fat. In small bowl, combine remaining soup with the water. Spoon over patties. Return to oven and bake for 10 minutes or until gravy is hot. Garnish with mushroom slices.
I served the salisbury steaks with mashed potatoes formed into balls with an ice cream scoop and diced beets. It looked like a meal from a 50s diner.
Do you remember several posts I made about Maria's friend, Brach, who received a serious head injury in a car accident in early November?
Last week, he was examined by the neurologist who treated him in the hospital. He was very pleased with Brach's progress. Brach is still healing and I have been told that it takes 2 years to recover from a head injury.
The nurses at the doctor's office refer to Brach as the "miracle boy". When Brach was first admitted to the hospital, his brain injury was so severe that the doctor predicted the likeliness of Brach's living the rest of his life in a nursing home.
At the most recent visit, the doctor asked Brach what he would like to do with his life. Brach replied that he would like to be a chemist. The doctor said, "Then be a chemist."

That is simply miraculous about Brach!! How I praise the Lord for touching him as he did.
And the recipe sounds delicious. As I'm always looking for new ways to use ground meat, I will definitely give it a try.

This recipe is in the mennonite circle. We served it alot but the name of this recipe is called "Poor mans steak"
I too,came from a scientific background...with a degree in Physics working at Fermi Lab back in the 70's We raised our children in a conservative (amish beachy) Mennonite church. Who knows wherer this recipe originated from.....Take care Nancy
