Caribbean Lime Chicken
I like to prepare my Sunday dinner on Saturday, so I can heat it in the oven while we are at church. More often than not, chicken is on the menu for Sundays. This recipe is fun and different and I thought you might enjoy it.
Caribbean Lime Chicken
4 Tbsp lime juice, divided
2 tsp minced garlic
1/2 tsp: salt, thyme, red pepper flakes and black pepper
3 lbs. skin on chicken (I prefer mine to be skinned)
2 Tbsp oil
4 lg. onions, cut into narrow wedges
2 med. tomatoes, seeded and diced
1/2 tsp curry powder
lime and orange wedges
fresh chives (optional)
Mix 3 Tbsp lime juice, garlic, salt, thyme, pepper flakes and black pepper in dish. Add chicken and mix well. Heat oil until hot in large skillet. Place chicken in skillet in single layer and cook over med. heat until browned, about 5 min. Turn chicken over and brown other side, about 5 min. Add onion to pan and cook, stirring often, about 8 min. or until chicken and onions are cooked through. Add tomatoes and curry powder to pan. Cook 2 min. Stir in remaining lime juice. Serve with rice. Garnish with citrus wedges and fresh chives, if desired. Makes 4 servings.
We have been enjoying the Spring weather in our area. Often the best description of springtime in northcentral Montana would be volatile. We get a lot of wind and cool days, so when it is warm and sunny we make sure to enjoy it.
David has been in Bozeman for three days at a commercial loan seminar. We look forward to his returning home tonight. He's had to miss Jonathan's school's spring program and the AWANA awards night.
This is the time of year when activities are coming to a close. I am so appreciative of the AWANA program in our town. Jonathan has been a Cubby this year and has been in the care of three excellent, enthusiastic ladies. I will be certain to thank them for all they have done for the kids. I have been an AWANA listener and have enjoyed working with the older kids very much.
Maria has another month of school before graduation. We are planning a graduation party for her. Her friend, Brach's dad is going to help David with some Dutch oven cooking. It should be lots of fun.
I am getting anxious to get my garden planted, although it is still a bit early. I put spinach and a variety of lettuce seeds in the cold frame on Monday. David keeps teasing me and asking for fresh salad.
We're going to enlarge the garden this year, which is really exciting for me. It will probably be less so when I have more weeding to do in the summer months!

I normally do chicken in lemon but I have been wanting a change. Your recipe sounds great! Lime sounds like a great twist.
