Roasted Potatoes with Rosemary
I tried a new recipe yesterday that my family enjoyed and it is an easy one, so I thought I would post it for my blogging friends.
Roasted Potatoes with Rosemary
2 pounds small potatoes
6 cloves garlic, minced
2 - 3 Tbsp extra-virgin olive oil (enough to just coat potatoes)
2 Tbsp fresh rosemary leaves, chopped
salt and pepper to taste
Preheat over to 500 degrees or highest setting.
Cut potatoes into "french fry" shapes and place on a cookie sheet. Combine with garlic. Coat potatoes and garlic with oil and season with rosemary, salt and pepper.
Place on lower rack of oven and roast 20 to 25 minutes, turning potatoes once after 12 minutes. Continue roasting until golden and crisp at edges.
It is always fun to find a new potato recipe, especially one that smells as fragrant as this one. Enjoy!

I have been making potatoes like this for a couple years now. And just recently, I started roasting broccoli the same way---with the olive oil and rosemary. It is delicious.
