Frugal Meals

I tried a new recipe that I found in a Sunset magazine last night.

Everyone liked it and it was cheap, low fat and easy.

 

Saute 2 cloves garlic in 2 T. butter,

Add 2 cups lentils and toss to coat with butter

Add 4 cups chicken broth and simmer about 25 minutes until cooked

Stir in 2T fresh ginger

1T lemon zest

1/4c.lemon juice

salt to taste

pepper

 

top with a little chopped cilantro.

 

You could serve this with some flatbread and raita(yogurt, chopped mint and salt)  or

rice.

 

Easy!
