• Thursday, August 30, 2007 - The Best Laid Plans, Laid to Rest
| This morning I woke up to the sound of more rain. Thank you Jesus! And it was dark and cool in the house for the first time in months. And while our morning nature walk was now out of the picture, that was fine because I plan on using my oven today and cooking with my 5 year old. Then I my father-iin-law calls and says we have a busted pipe and our water will be shut off today, and probably all day tomorrow. :( So, now I can't flush my toilets, wash our hands, do laundry, wash dishes, mop floors, or do my freezer cooking that I had planned. :( AND I have someone from our church coming out tomorrow to give a bid on some construction so I had planned on spending this evening doing what we ALL do, running around stashing and wiping to make my house look visitor friendly!
SO, with little else to do, I guess, I'll do some blogging and reading today.
I have to admit that I think I'm addicted to freezer cooking now. I keep finding more and more things to make and freeze. The other day I was making waffles in our waffle iron (something I haven't done in years, we usually just buy the frozen ones) because I wanted to try making whole grain ones from scratch! They turned out SO well, that I made up two more batches and spent and hour and a half making tons of waffles and freezing them! I have BAGS full of frozen waffles now. And they taste SOOO much better than Eggos! And today Simon and I were going to attemp making our own Mini Corn Dogs! We bought some Nitrate Free dogs, (to cut into thirds) and we were going to dip them in some thick sweet cornbread batter, and then try both frying and baking them to see which turn out best. Simon suggested we experiment with wrapping the dogs in cheese before we dip them too. (Boy after my own heart) We also want to make some more homemade cereal bars, this time with mixed berries. And some pigs in a blanket! Then we want to try out a recipe for Macaroni and TREES (broccoli) that I got from the whole foods website. Maybe we'll do some cooking anyway. I did fill both sinks up with water before my water got shut off so I could soak dirty dishes! And I set out two buckets to collect some rain water so maybe I can flush my toilet!

About Me
Here on the side of our little Arkansas mountain. Our family includes me, Allison, my husband Justin, my step daughters (14 yo twins) "Bert" and "Nic", our sons (6yo) "Si", and (3yo) "Roo". Next door are the in-laws Wendy and Dan. And between the two homes, we have 3 dogs and two gardens. We live next to a National Forrest so we see all sorts of wildlife. We love homeschooling, gardening, whole food cooking, quilting, crafting, and having bonfires!
