Trying Simple Life in Taiwan

and my dh liked them, though I quickly told him the steamer was NOT a replacement for my oven, but in the meantime, it will do...... I do not have pix as they were all lopsided due to the paper muffin cups. I think I will get reusable muffin cups, or even small mini loaf things. Our steamer is a double decker and fairly big. I think I might try to do both levels at once next time.

I made Egg Muffins, though I added a little nutmeg and cinnamon for a flavor. The recipe is:

1 3/4c flour (I used 1c white and the rest wheat)

1/4c sugar

1t salt

3t baking powder

1 C milk

1beaten egg

3T oil.

Mix dry ingredients together in a large mixing bowl. Make a well in the center of the dry ingredients, then stir in, all at once the milk, egg and oil. Stir until dry ingredients disappear--use only a fork or spoon, and DO NOT BEAT. Pour into muffin mold (12small or 9 large).......now, during the stirring part, I started my steamer (it is a large pot that sits on top of the burner and we have gas). I place the paper muffin cups on a plate and placed that in the steamer. All places I have seen for steaming breads and cakes said for muffins, 20min. But mine were done in 15.

And there you have it. I think I will try it with some other recipes as I was really pleased. I understand it will work with any bread/cake recipe that you don't have to cream together the sugar and butter. There are tons of recipes for breads and all, but I am more into the muffins and mini loaves.
