Monday ~  Pasta with Lentil Sauce & Feta Tuesday ~ Left-over Pumpkin Dhal with Poppadums Wednesday ~ Macaroni Carbonara Thursday ~ Polish Sausage Salad Friday ~ Sausage, Bean & Brussels Sprout Soup Saturday ~ Red Pesto Penne with Prosciutto Sunday ~ Warm Sausage Pasta Salad Polish Sausage Salad 6 large potatoes 6 eggs, hard boiled and peeled 2 slices thick 1/2 inch double smoked ham, optional 1 cup garlic chives or (garlic & red onion chopped finely) 1 tablespoon mild mustard 8 polski or gerki (gherkins) 5 tablespoons mayonnaise 2 teaspoons salt cracked pepper (optional) 1 (KR?) Polish Sausage or 2 sticks export polish sausage chopped 1 green spring onion chopped Mix onion, mustard, mayonnaise, garlic, set aside. Serves 6. Adapted from goodrecipes.

Friday, June 6, 2008 - Menu Plan Monday ~ June 9

Last week's menu included Egg & Nori Rolls and Cabbage with Split Peas.  I liked both of these.  For anyone who has trouble eating nori rolls because of their teeth may find Egg & Nori Rolls easier.  Cabbage with Split Peas reminds me of an earlier dish we made called Indian Spiced Quinoa with Chicken.  I just love what the split peas add to the dishes.  The cabbage meal seems very cheap depending on what you have to pay for the spices.  We use dried curry leaves that I found at Olive Health Foods, a local(ish) health food shop.  Monday ~ Chipolatas with Tumeric Pancakes Tuesday ~ Fish Fingers with Mashed Potato Wednesday ~ Spaghetti Bolognaise Thursday ~ Chili Con Carne Friday ~ Pies, Chips, Peas & Gravy Saturday ~ Sausage Casserole Sunday ~ Spicy Chorizo Penne

Sunday, June 1, 2008 - Menu Plan Monday ~ June 2

Last week we ran out of pumpkin.  It was a homegrown pumpkin and we were guessing how many meals we got out of it.  So we didn't get to eat the curry or the lasagne.  However, we did get to have a very nice Warm Cottage Salad.  I love collecting recipes for things that have pork sausages in them.  Also I collect recipes for chorizos, pork mince, things I can get easily at the supermarket.  The Gado Gado was beautiful.  Hubby went to a lot of trouble and set it out beautifully on the plate.  I even enjoyed the satay sauce (Ayam brand).  We swore we were never going to eat satay sauce again after our satay pizza, homemade sauce, that we made in 2003.  It was from the peanut butter jar I think, the failed recipe.  The Gado Gado was a meal of vegetables with eggs and sprouts and wombuk or Chinese cabbage. Another new recipe we tried was Mexican Burrito Bake .  The recipe included refried beans which turned out almost like meat.  I really enjoyed it.  We were able to use up some of the corn cobs in the freezer.  We didn't use pepitas, thought we had them, but it was lovely without them.  It is a pumpkin dish.  The rissoles were beautiful too, I loved smelling the fresh parsley.  Hubby enjoyed the Asian dishes he made.  This weeks meals: Monday ~ Egg & Nori Rolls Tuesday ~ Vegetable & Crab Linguine Wednesday ~ Baked Beans with Cheese Cornbread Thursday ~ Pork Chow Mein Friday ~ Lentil & Bacon Soup Saturday ~ Cabbage with Split Peas Sunday ~ Tomato & Cannellini Bean Soup

Monday ~ Warm Japanese Noodle Salad Tuesday ~ Pumpkin Laksa Wednesday ~ Gado Gado Thursday ~ Red Bean & Pumpkin Curry Friday ~ Mexican Burrito Bake Saturday ~ Lentil Olive and Pumpkin Lasagne Sunday ~ Beef, Feta & Green Onion Rissoles This menu came to be posted early as I was looking for recipes for udon noodles.  DS17 found some noodles in the cupboard.  Also we were given a large pumpkin.  So I just kept going, so will have some things on the shopping list when I go on Thursday, and order fruit Wednesday.  Six of them are new recipes, the curry is a favourite.  I think dh is getting tired of risotto, and some of our other recipes without meat don't seem enough in this cold weather.  Everyone here loves feta so that will keep our spirits up.

Monday ~ Speedy Fried Rice Tuesday ~ Spinach Pilau Wednesday ~ Pumpkin & Pancetta Risotto Thursday ~ Spaghetti with Rookwurst & Mustard Friday ~ Corn & Potato Chowder Saturday ~ Spanish Rice with Chickpeas, Pumpkin & Chorizos Sunday ~ Pancetta Macaroni Cheese A note about the pumpkin.  It is a cross, came up in the garden by itself.  It has the color of a butternut squash, but unfortunately didn't taste as superior, but was fine in the dish which we loved.
