I am very organised for next Monday, that is because I am doing a pantry challenge. Monday ~ Pasta with Tomato, Chili & Borlotti Beans Tuesday ~ Vegetable & Chickpea Stew (another great pumpkin recipe) Wednesday ~ Spiced Pumpkin & Lentil Soup Thursday ~ Potato & Cherry Tomato Salad Friday ~ Tuna & Sweet Potato Cakes Saturday ~ Lentil & Cannellini Bean Soup Sunday ~ Borlotti Bean & Chorizo Soup
