2006-Jan-3 - Gena's Chilli ~ Weezy Style
Gena wants chilli! Here you go :)
I generally make a huge crockpot of this and then freeze what's left into individual servings.
Day before : Start soaking your beans--whatever you like--we use Kidney and Small Reds -- 6 cups or so total
Brown 2# of venison or other burger with finely chopped onions and peppers, sea salt, pepper, chili powder and cayenne to taste!
(toss in leftover beef roast or steak if you have some at the end of this cooking-if I have roast of some sort on hand - I will cut down the burger, it's better-- I think, about 50/50 ;)
Meanwhile in the crockpot, take your drained beans and tomato sauce (at least a quart jar) mix well. I then toss in some fresh finely chopped onion and peppers, and then stir in my meat mixture.
You can add spices and such to your tastes--we like lots of cayenne :)
I get it to a consistency I like with a little water and masa flour (little!) mixed together then stirred in--or just water--- and let simmer for hours :)
Serve with some homemade cornbread, a stick of butter and a jar o' honey--you're SET!
