I LOVE BRIE..love it, love it love it! Just found this recipe...and altho I personally think Brie MUST be eaten with FRESH bread (crackers?! EW!) the rest of this recipe sounds wonderful!!!!!!

 

Baked Brie with Fresh Herbs

Ingredients:
1/4 cup sun dried tomatoes, chopped
1/2 cup fresh basil leaves
2 tablespoons grated parmesan cheese
2 tablespoons toasted pecans or walnuts
1 tablespoon olive oil
1 clove garlic, peeled
1/8 teaspoon freshly ground pepper
salt to taste
16 ounces Brie cheese

In bowl of food processor combine tomato, basil, cheese, nuts, oil,
garlic and pepper. Process to form a fine paste. Season with salt.
Scrape into a bowl, cover and refrigerate until ready. Bring to room
temperature. Trim the white crust from the Brie and cover the top of
the cheese with the herb mixture.  Place Brie on a baking sheet and
bake at 375 degrees F oven for about 5 minutes until the cheese is
beginning to melt. Transfer to serving plate and surround with crackers. (BREAD!! :)
Serve immediately.
