2006-Sep-6 - Blackberry Muffins! mmmmm!

Blackberry Muffins

1/2 cup (1 stick) butter softened to room temperature
1 1/4 cups sugar
2 eggs, room temperature
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1 cup fresh blackberries
4 teaspoons sugar

 

Preheat oven to 375 degrees. Line muffin cups with paper liners. Using electric mixer, cream butter and sugar in large bowl until light and fluffy. Add eggs, one at a time, beating well after each addition. Sift flour, baking power and salt into a small bowl. Mix dry ingredients into butter mixture, alternately with milk. Fold in blackberries. Divide batter among prepared muffin cups. Sprinkle muffin tops with sugar. Bake about 20 minutes until toothpick inserted into center of muffin comes out clean. Serve warm with butter.

Makes about 18 muffins.
