It's Friday Once Again!

It's Friday on the farm and what a wonderful one it is.   To begin with, it's "Breakfast With Dad" at our local grade school.   This meant the little ones didn't have to ride the bus this morning (We got to sleep a little later!) and Daddy not only got to take them school but he got to eat with them in their own surroundings.   Normally he comes home with tales of not eating because he was to busy cutting up little ones food for them (NOT our young'uns either!) but he said today went very smooth.   They ate a nice quiet meal and then he walked each of them to their classrooms and talked to their teachers.
   Today is also Keith's birthday.   Now I'm not going to tell you how old he but let's just say we are both so old we could have known Moses and his wife!   I asked him what kind of cake he wanted and since he had just seen a Coconut Layer Cake on TV, guess what he said!   I haven't made a layer cake in YEARS!   Number one, I feel they are harder to make and number two, no matter how you cut them, it seems to big a piece for little ones.   However, it is his birthday so I dug out the old round pans and the cakes are now cooling.
  If this wasn't enough he also asked me to make Seven Minute Icing for it!   I know I haven't made that for twenty years but once again, I'm going to do it.   I know this is going to sound strange but some reason I want to call this frosting, "White Mountain".   As I said, it's been years since I made it and I'm wondering if it was called that at one time???
  It seems as if I'm doing my fair share of cooking these past few days.   On Wednesday I made a Peanut Butter Cake from scratch and then yesterday I tried out a new cookie recipe.  They were called, "Coffee Bonbons" and Keith loved them.   Of course he's a real coffee lover (I like the smell but don't care for the taste!) so I figured he would like them.   Jeni liked them too so I guess they'll be another recipe to add to my ever growing file.   I'm going to post a picture of them so you'll see what they looked like.
   Well, my cakes have cooled so I best get in there and start that frosting.   I hope your all healthy and warm this Friday morning.   Have a great weekend!   Hugs, Sher

2006-Mar-3 - A trick for cutting layer cakes

I learned this from a gal who used to do catering at hotels:

Instead of cutting the cake into triangles, like you would cut into a pie. Actually slice down it like you would a round loaf of bread (thicker slices) and cut those slices into thirds or fourths - this way you actually get a round cake to spread further and the pieces can be as big or as small as you like.

oh and I love 7 minute frosting - yum!

the 7 minute frosting was also called boiled frosting, white peak frosting or at least those were some of the names called here in the south. Have a great weekend!
