Meatloaf

Here's the recipe for my meatloaf and how I make hotdish. A very dear elderly lady from church gave it to me. My whole family loves it and if I'm having a get-together it's the most requested meal.
Meatloaf
1 1/2 pound ground meat (any kind works well)
1/4 cup chopped onion (I use more as I love onion)
3/4 cup oatmeal
1 cup tomato juice (I use tomato sauce and a little water)
1 egg, beaten
salt and pepper to taste
In a large bowl, combine all either using your hands or a wooden spoon. Pour into a ungreased bread pan. Combine 1/3 cup catsup, 1 tsp prepared mustard and 2 Tbsp brown sugar or sucant and pour on top. Bake at 350 for 1 hour. Let sit 5 minutes and serve.
As a change of pace, I've poured half of meat mixture in bread pan, made a indent down the middle, filled with mozzarella cheese, poured remaining half of meat mixture on top and instead of the catsup mixture, I top it with pizza sauce. Delish!
Leftover meatloaf makes a wonderful hot dish.
Hot Dish
Aprox 2 cups cooked egg noodles (give or take depending on the amount of meat used
1 10 oz can tomato sauce
1 pint corn, drained (can use cream corn but don't rinse or drain)
Left over meatloaf chopped up into smaller pieces
season to taste.
In a bowl, combine all. Place in greased 2 qt roasting pan or baking dish. Bake at 350 until hot and bubbly. You may need to adjust amount of tomato sauce and water depending how many noodles you use. I rarely measure any of it. If you don't have meatloaf, use a pound of ground meat (I really like ground venison).
