Apple Butter

Here's how I make apple butter:

 

16 cups thick apple pulp (I've used unsweetened apple sauce in a pinch)

1 cup vinegar (either cider or white - which ever I have on hand)

sweetener of choice to taste (I like sucant or brown sugar)

4 tsp cinnamon (sometimes add cloves and ginger)

Mix together in a large pot. Simmer 1 1/2 to 2 hours stirring frequently to prevent sticking and burning. Ladel into hot jars - process in boiling water bathe 15 min for half pints.
