Good Sunday morning everyone. Hope all are in good spirits. Some of you asked about the pictures I've recently been pasting. Well, I'm admittly computer illiterate LOL but after 7 months figured out that I can copy and paste from another site I post on. I don't know why I never thought to do it before LOL.
Well, yesterday was beautiful - too bad I slept most of it away LOL. I did manage to do a little laundry and cleaned the bathroom. Did some dishes too. 
Dinner was a new conconction. I took some boneless chicken breast, placed them in a cast iron pan, poured some itialian dressing over them, covered and baked in a 375 oven for about a half hour. Then I tood a head of fresh brocolli, broke it up and put it in with the chicken. Covered again and baked until the brocolli was tender. Delish! Chicken remained tender and juicy, and the brocolli had a wonderful flavor. I enjoyed it very much.
Today will be a day to relax I think I've mentioned that I like to keep the Lord's Day as intended. Dinner will be tuna salad in pita pockets and fresh peas. I've been trying to plan out my week as I'm off and not leaving for diabetes camp until Friday. (I'm so excited!! )
Monday for sure is laundry day, garbage day, and I'm thinking living room day although, if the weather is as hot and muggy as they are predicting, I'm spending the week in the basement! I do need to go weed the garden, make bread, I'm low on laundry soap so since I'll be in the basement, will whip up a batch of that, and last but not least make some granola and trail mix to take to camp. Whew, I'm tired just thinking of it all LOL.
Man, if grocerie prices go up again around here I'll scream! We have an Aldi's, Super Walmart, and a local grocerie. Aldi's doesn't have much for fresh and meat, and I don't buy much canned foods at all. Walmart's produce is awful and meat isn't trustworthy. The local supermarket has the best meat and produce and is getting better at having more organic. The small Mennonite shop has seasonal produce - a lot of it organic, and a lot of bulk things. I can get different sweeteners there as well such as sucanat, rice syrup, molasses, ect. They also have good coconut oil. That is were I get my back up laundry soap as well. We also have a "Health Food Store" that has much of the same as the Mennonite shop but has the BEST raw honey I've found without going online to find it. Milk has risen to 3.50 - 4.00 per gallon and if you want organic, it's that much for a half gallon. Eggs here are 1.20 a dozen but I can pay 1.25 a dozen at the Mennonite shop for fresh organic eggs so that's what I get. Cheese, I'm embarassed to say that cheese is quite high too. Wisconsin cheese here in Wisconsin isn't any different in price than if you bought it in say Maine or even Alaska (where I'm told prices are outragous because of the shipping). I've cut back as much as I can, do my own baking, never eat out, can everything, buy on sale, ect.... It's getting tough so will have to be more creative I guess.
