A friend of mine gave me this recipe. It's very good, a refreshing change from regular spaghetti and if you use the jar garlic and canned tomatoes, whips up in no time. 2 tsp Olive Oil 1 tsp Dried Oregano 1 lg garlic clove, minced (I use the jar type and put in a "few" heaping spoonfuls) 3 cups diced tomatoes (If in a hurry, I'll open a couple cans of diced tomatoes, drain, measure and use) 1/2 cup sliced green onion 1/4 cup chopped fresh parsley, divided 2 Tbsp lemon juice 4 cups hot cooked spaghetti 1 cup crumbled Feta Cheese, divided Heat oil in large pan over med/high heat. Add oregano and garlic; saute' 30 seconds. Add tomatoes, onions, 2 Tbsp parsley, and lemon juice. Cook 2 minutes or until thoroughly heated. Combine tomato mixture, spaghetti and 3/4 cup cheese. Toss gently. Top with remaining cheese and parsley. Serves 4 Leave a Comment { Last Page } { Page 99 of 171 } { Next Page } |
