Good rainy Monday morning everyone!!  Am glad for the rain as we are dry. It started raining around 9pm last night and has been lightly raining off and on ever since. It's coming down pretty good right now.

Yesterday I made the executive decision to observe the Lords day of rest. I did nothing productive. I slept until 3pm (now remember, I work 11pm - 7am), watched a movie, had oatmeal for supper, watched Home Makeover then went back to bed.  Woke up at 2230 in a frenzy as it's a 25 minute drive to work LOL. I'm quite "sluggish" tonite but I'm afraid my diet was a bit off this weekend. I normally eat only organic fruits, veggies, whole wheat grains, unrefined sugars, ect..... This weekend however, I didn't drink enough water , splurged on the refined sugars , ate my Mom's white bread and pasta , the wrong spuds (my blood sugars don't like spuds - esp russets! ), Pizza Hut Pizza  (my sugars HATE that too!!)  it goes on. I'm so paying for it now.    I'm bloated with what feels like 5 lbs of extra fluid and have no energy. I can guarentee that it won't happen again any time soon.

Today is laundry day. I also need to tackle my kitchen - my weekend to work usually finds mountains of dirty dishes and junk waiting for me by Monday. My daughter refuses to do dishes as they "make her gag". Ya right.  Sigh..... I'm thinking dinner will be something very light yet healthy. Organic greens and chicken soup may just be the ticket. We'll see - I believe I have a quart or two of soup left. I'm still hungry for those cookies and if I feel up to it will make a batch this afternoon. I use whole wheat flour, organic oats and a mixture of barley, and other grains that are milled to look like oatmeal. (I'm having a huge brain fade right now!) The raisins are organic and I use a little cane juice or sucanat as a sugar substitute. I'm tempted to use a bit of honey to see what kind of flavour that produces.  Hmmmmm. Tomorrow I'll make bread - whole wheat of course. I've had the best luck with Jackie Clay's recipe I found on the Backwoods Home web site. It's in her article "Bread, the Staff of Life". It's an excellent article with "how too's" and tons of info on the types of grains used in breads. Great step by step instructions that everyone can follow, and a few great recipes - one of them being whole wheat and another for white bread. When first switching over to whole wheat, I made the white recipe using half whole wheat flour and half unbleached white flour.  Mmmmmmmmm!! My daughter & I ate a whole loaf right out of the oven!  She also has some wonderful canning ideas in her "Ask Jackie" section. I encourage you to check her out.

Well, I'm going to have to get going here and get out my garbages and laundry. I'm off tonite (thank goodness!) so will see ya all Tuesday night.

Thanks for sharing your day with us -I really enjoy reading about how others are doing on their homestead. Could you post the site you talked about with the bread recipe you use.
