Another cold day

Yesterday's high temperature was single digits, and the howling wind made for a wind chill of -23º! A little brisk, to say the least. Today was a bit better; we made it into the low teens and the wind is much less strong. My hubby and oldest son are outside now, bringing in more firewood for the wood stove.

To warm up everyone, I have made a "comfort food" dinner: Chicken Stuffing Casserole, mashed potatoes, cranberry sauce, jello, and Christmas cookies. The girls are baking chocolate crinkle cookies tonight. Yum!

My recipe for Chicken Stuffing Casserole is really simple. I use my largest Tupperware bowl, and fill it with bread cubes (approximately 1.5 loaves). Cover these with a towel, and let them sit overnight. The next day, add cooked, diced chicken, diced celery, and chopped onion. In a separate bowl, I mix about 2-3 cups of chicken broth, 5-6 eggs, salt, and pepper. Pour this mixture over the bread/chicken mixture and stir well. Pour into a greased 13 x 9 baking dish and dot with butter. Bake uncovered in 350º oven for about one hour.

We're taking a two-week break from our home school, which the children and I both will enjoy!   I'm going to teach the girls some sewing, we're going to do some baking, and I hope to make some progress on my Churn and Dash queen size quilt. It's pieced and in the frame; I just don't seem to find much time to get the quilting finished! Hopefully I'll get some done over the next couple of weeks.
