Rain, rain... and other odds and ends

Well, my husband says it's better than snow, but I'm not so sure about that! It is heavily raining at my house, and it seems so dreary. But, I have a warm, dry home full of love and children, so I can't complain!

I tried a new recipe last night. It's called "Veg-All Beef Casserole." I had copied the recipe from the back of a Veg-All can when we first got married, 20+ years ago, but I'd never made it. It turned out delicious, and my husband said to "definitely make it again." I made a couple of variations to the recipe; I doubled the recipe, and I topped the casserole with 2 Cups of shredded cheddar cheese.

Veg-All Beef Casserole
1 C. uncooked noodles
1 onion, finely chopped
2 T. butter
1 lb. ground beef
2 T. flour
1 t. salt
pepper to taste
1 C. canned tomatoes
1 can (16 oz.) Veg-All mixed vegetables

Cook noodles till tender with 1/2 t. salt. Lightly brown onion in butter. Add ground beef and brown. Blend in flour. Add cooked noodles. Add can of vegetables, including liquid, tomatoes, salt, and pepper. Pour into greased baking dish and bake 20-30 minutes at 350 degrees. Serve hot.

I spent a cozy evening last night in front of my electric fireplace. I curled up in my chair with a large stack of Backwoods Home Magazines that I got from the "freebie" cart at the library. My heart yearns toward the country. Though we live outside city limits, we have no acreage. My desire is to have a little bit of land, even just a few acres, some small animals, and a large garden. The Lord knows my desire, so I am faithfully working diligently and saving money in hopes of my dream coming true!
