I'm Thankful!

The Lord has been so good to me and my family; too many blessings to list! I praise Him for His care and provision over the years. We are staying home for Thanksgiving, having a family dinner at our house. I've been sick with a cold, so I haven't felt much like cooking or decorating. We're going to have a simple meal: ham, mashed potatoes, green beans, cranberry sauce, two pies (store bought), and cookies. What a blessing to have a delicious meal, family, and fellowship!

Here is a delicious recipe for Sweet Cinnamon Quick Bread, taken from Pillsbury Best Muffins & Quick Breads.

Bread:
2 C all-purpose flour
1 C sugar
4 t baking powder
1-1/2 t cinnamon
1/2 t salt
1 C buttermilk
1/3 C oil
2 t vanilla
2 eggs

Streusel:
2 T sugar
1 t cinnamon
2 t margarine or butter, softened

Heat oven to 350 degrees. Grease and flour bottom only of 9 x 5 or 8 x 4 inch loaf pan. In large bowl, combine all bread ingredients; beat 3 min. at medium speed. Pour batter into greased and floured pan. In small bowl, combine all streusel ingredients till crumbly. Sprinkle over batter; swirl to marble batter and streusel. Bake for 45-50 minutes or till toothpick inserted in center comes out clean. Cool 15 minutes; remove from pan. Cool 1 hour or till completely cooled. Wrap tightly and store in refrigerator.
Makes 1 (12 slice) loaf.
