Patriotic Fruit Pizza

Patriotic Fruit Pizza

1 (16 1/2 oz.) pkg. refrigerated sugar cookie dough
1 C of sugar, divided
2 T of cornstarch
1/2 C of orange juice
1/4 C of lemon juice
1 (8 oz.) pkg. cream cheese, room temperature
1 T of milk
1 t orange peel, grated
2/3 C of heavy whipping cream
1 apple, peeled and sliced thin
1 1/2 C of fresh strawberries, halved
1 C seedless dark purple grapes, halved
1 banana, sliced thin
1 C of fresh raspberries
1/2 C of fresh blueberries

Preheat oven to 350 degrees F. Remove the cookie dough and let it stand at room temperature for 10 minutes.

Carefully spread the dough onto an ungreased pizza pan. Bake the dough 15 minutes or until a golden brown. Remove and allow the dough to cool on the pan.

Dump half of the sugar into a small saucepan. Add the cornstarch and toss slightly to combine. Pour the orange and lemon juice into the mixture.

Place the pan over medium heat bringing the mixture to a steady boil.
Continue boiling for 2 minutes stirring constantly then remove the pan from the heat, setting aside to cool. Cube the cream cheese and place in a large mixing bowl. Pour the milk over the cream cheese. Add the orange peel and the remaining sugar. Beat the mixture until blended together well and smooth.

Place the whipping cream into a small mixing bowl. Beat the whipping cream until soft peaks begin to form. Fold the whipping cream into the cream cheese mixture until blended in well. Spread the mixture over the cooled crust. Place the apple slices around the outside edge of the crust.

Next layer the strawberry halves around the crust. Circle the halved grapes on next. Add the bananas to the ring. Place the raspberries onto the crust next. Finish the ring with the blueberries. Spread the reserved glaze evenly over the all the fruit. Place covered in the refrigerator for about 1 hour or until chilled.

Makes 12 servings

Preparation Time: approximately 30 minutes


Firecracker Cupcakes

Firecracker Cupcakes

1 (18 oz. ) box of devils food cake mix
1 1/4 C of sour cream
3 eggs
1/3 C of canola oil
2 T instant coffee crystals
1/2 t ground chipotle chili pepper
1 (11.5 oz.) pkg. semisweet chocolate chunks
2 t flour
1 (8 oz.) pkg. cream cheese, room temperature
1/2 C butter, room temperature
1/2 t vanilla
2 1/2 C of powdered sugar
Red and blue food coloring
2 oz. semi sweet chocolate, chopped
1/4 C of whipping cream

Preheat oven to 350 degrees F.

Line 24 muffin cups with paper liners. Dump the devils food cake mix into a large mixing bowl. Add in the sour cream, eggs, and oil. Sprinkle in the coffee crystals and pepper.

With an electric mixer on low speed beat the ingredients for 45 seconds.
Adjust the speed to medium and continue beating 2 minutes making the batter thick.

Place the flour in a small bowl. Add the chocolate chunks and toss to coat.
Fold the chocolate into the cupcake batter. Fill the prepared muffin cups 3/4 full of the batter.

Bake 20 minutes or until the tops bounce back when lightly touched. Cool in the pan for 5 minutes then remove to wire racks to continue cooling.

Place the cream cheese and the butter into a mixing bowl and beat on medium speed for 30 seconds. Add the vanilla and beat until combined.
Slowly beat in the powdered sugar until the mixture reaches a frosting consistency.

Separate the frosting into 3 small bowls and tint one bowl with the red food coloring and 1 bowl with the blue food coloring. Frost the cupcakes dividing between the 3 different colors.

Place the chopped chocolate into a small mixing bowl. Heat the whipping cream in a saucepan over low heat to just boiling. Let the mixture stand for 5 minutes then whisk until smooth.

Place the mixture into a sealable baggie. Snip one corner of the baggie and drizzle the chocolate over the frosted cupcakes.

Makes 24 cupcakes

7-2-09 Up-date

Kristi was board earlier today and decided to play wii.  She played monopoly with Hope!  Hope is our soon to be 10 year old golden medical alert service dog.  We train the dog to all kinds of stuff some funny and silly but this is too much!

Titus is doing great in his service dog training.  We took him out for the first time to go shopping and he was wonderful.  If we stopped and looked or spoke to someone he would lay down with out being told to.  I thought it was odd, so I kept testing him.  I would walk and stop not look at him he would just lay down .  That is amazing for a six month old puppy to do on his first outing in stores.  I wonder if Kristi is going to teach Titus to play monopoly??

We start training them as soon as they are born.  Also having good parents helps too.  It took me two years to find his parents, to find the lines I was looking for.  Now we need one more female golden.  We might get one from Alex's breeder.

Okay, Janet is in trouble she let Kristi and Mya run free on the mountain.  Worse yet with a camera .  Here are some pictures of the adventure.

JANET!!!!, we do not let the girls play speed bump in the middle of the Road!!! /.    We need to let the girls out of the house once in a while.  Poor Mya was so lost as to where milk comes from!! And did not know what a pine cone was!!!   Poor Kristi she thought there was more than one of her!!  Look at the locals nails on that local, see how long they are?? They could hurt the girls!!

Sorry but I had to write and show the pictures , they are so cute.  I will show more latter.

Avocado Salsa...I could eat this all by my self

Avocado Salsa
Yield: 4 Servings
Sort of a combination of salsa and guacamole, this dip is sure to please lovers of both. If you like your salsa hotter, add another jalapeno or a few drops of Tabasco sauce.

1 avocado, peeled and diced
1/2 c Tomato, Chopped
1/2 c Red Onion, Chopped
1/4 c Green Bell Peppers, Chopped
1 Jalapeño, Finely Chopped
1/2 t Garlic, Minced
2 T red wine vinegar
1 T olive oil

Combine the vegetables in a medium bowl. Mash the garlic with salt in a cup or small bowl. Add the vinegar and oil to the garlic. Pour the dressing over the vegetables and toss to combine the ingredients. Serve chilled or at room temperature.

Heat, a Recipe and Summer News

    Once again morning has came to "Old Crow Farm" bring the heat with it.    While blessed with a break in the humidity since Saturday evening, it's till to hot for my liking.     I look out my window at my flower gardens that so desperately need weeding and then decided to turn my head the other way.~~~It's not worth having a 'clean' garden if it means being out in that heat.
      Being stuck in the house does have it's advantages....It's the perfect time to try out some new recipes.    For weeks I've been wanting to try out a recipe called "Spinach Shrimp Fettuccine" and yet for some reason kept putting it off.   I finally decided yesterday was the day it was going on the menu.    I knew when I started it the two little ones wouldn't eat it so decided to grill them shrimp.   This way we would all be happy.
      When I cook I try never to spend more than $5 on meat for any given meal.  (Okay, truth be told, I try to keep the whole meal under $5.00!)   This recipe stretched the budget but the raves I got from Keith were worth it.   I have to admit, served with a crusty bread it looked like a meal you would have ordered in a high dollar restaurant.    We have decided we'll definitely be doing it again and I decided to share it in case some of you would like to try it too.
 
                                            Spinach Shrimp Fettuccine
 
 
1# uncooked Fettuccine                                                 2 medium tomatoes, chopped
1 pkg. (6 oz.) baby spinach                                           1/2 t. Italian Seasoning
4 garlic cloves, minced                                                  1/4 t. salt
2 T. Olive Oil                                                                    1/4 Cup Parmesan Cheese, shredded
1# uncooked shrimp
 
      Cook Fettuccine.   While cooking~~In a large skillet sauté the spinach & garlic in oil for 2 minutes or until spinach begins to wilt.     Add shrimp, tomatoes, Italian Seasoning & salt, sauté for 2-3 minutes or until shrimp turns pink.    Drain Fettuccine & add to skillet, toss to coat.    Sprinkle with Parmesan cheese.  8 Servings.
 
       Like most of you, we too are getting ready for our Fourth of July party.    We've done this for the past thirteen years and for the first time ever, it's not being held on the Fourth.   My youngest sister is coming in from Louisiana and won't be in until the evening of the Fourth so we've decided to hold it on the fifth.   Even though that gives me an extra day to get ready,  I'm definitely going to need it.    The last I heard there is a chance of rain on the Fourth so that means it's a "wait & see" situation. ~~~ Will it cool down enough to be held outdoors (Therefore meaning we'll have to wait until the last minute to put the tent and tables up) or will we all be crammed in this little house?   If it's the least bit hot, it's being held inside.   We'll have four people here over 82 years of age and two of them have bad hearts.    I'm not taking any chances with anyone's health just because it means we'll be stacked on top of one another!!!!
     We're also down to a little over two weeks until our son gets married.   Are we ready?   Absolutely NOT!!!!   Drew still hasn't been fitted for his tux and I don't have a dress!   Nothing like waiting until the last minute!   I'll be so glad when it's over and my life is mine again.
      Last Friday Jeni had another dental appointment in Topeka so we got to hit a few more yard sales.   Remember how I said I would find the perfect rug for our enclosed deck?    Well, Friday I found it!   I know we'll probably only get one season out of it but for $3 I can afford to get a new one next year!   See why I love yard sales so much???
      Well girls, it's time to fix my crew some breakfast so I best head for the kitchen.   I hope your all enjoying your summer and staying cool.   Hugs, Sher


Applesauce Date Cake

Applesauce Date Cake
Yield: 12 Servings
Further proof that something sweet and delicious can still have significant nutritional value. This cake keeps well and is great for snacks or with lunches.

2 c Flour
2 t Sodium Free Baking Soda
1 t cinnamon
1/2 t allspice
1/2 t nutmeg
1/4 t cloves
2 eggs
1 c Brown Sugar, Packed
1/2 c Unsalted Butter, Softened
2 c Applesauce
1 c Dates, Chopped
3/4 c Pecans, Coarsely Chopped

Preheat oven to 350 degrees F. Spray a 9X9X2" pan with non-stick vegetable oil spray.

Stir together flour, soda and spices. Add eggs, brown sugar, butter, and 1 cup applesauce. Beat at low speed just until the ingredients are combined. At medium speed, beat 2 minutes longer, occasionally scraping the side of the bowl. Add remaining applesauce, dates, and walnuts; beat 1 minute. Pour batter into pan. Bake 50 minutes or until knife inserted in center comes out clean. Cool 10 minutes in pan.
