Yummy zucchini bread
Zucchini Bread2 cups organic unbleached all-purpose flour (or half all purp. and half whole wheat)
1 cup organic evaporated cane juice crystals
2 tsp. aluminum-free baking powder
1 tsp. sea salt
3 tsp. cinnamon
3 T. organic soy flour + 3 T. water
2 cups grated unpeeled zucchini (about 1 large zucchini)
3/4 cup olive oil
1 T. vanilla
Preheat oven to 325*. Grease and flour a loaf pan. Combine all ingredients and mix well. Pour into prepared pan and bake for 60 to 65 minutes or until a toothpick inserted near the center comes out clean. Cool in pan for 10 minutes before removing. Store in the refrigerator or freeze.
