A Distinctly Different Homestead


• Monday, March 24, 2008 - Migas Con Huevos

Here's another traditional Mexican breakfast that we enjoy.  I plan on serving it tomorrow.

Migas Con Huevos
5 corn tortillas, torn or cut into small bits
10 eggs, lightly beaten
10 Tbsp (or more, to taste) tomato sauce
2 1/2 Tbsp minced onions
oil (red palm, if you have it)
salt
1 cup shredded cheese

Begin frying tortilla bits in hot oil.  Just before they are crispy, stir in onions.  Cook and stir a few minutes, till onions are translucent.  Drain excess oil.  Add eggs, tomato sauce, cheese, and salt to taste.
Scramble eggs until done.  Serve hot.

I have found that the children enjoy it more without the tomato sauce, but then it's not traditional!

Thanks for pointing out the omission. That's what I get for typing an entry when it's not the children's nap time! Make sure to tell me if you try the recipe! My neighbor made this and it smelled so good I had to ask her what it was!

Oh, I have another question......actually two :) How much oil are you frying the tortilla strips in? Are you "deep frying" them,or just with enough oil to cover the bottom ofthe pan?

2nd question, are you scrambling the eggs with the tomato sauce, onions, etc?

How did your kiddos like it?

I used just a bit of oil to cover the bottom of the pan (don't want to waste it, you know! I add in the onions and let them cook a little while the tortillas are finishing up, then add in the other things all together. I mix it as I cook it.
