I was making a recipe for a church potluck and my heart sunk when I realized that I didn't have a can of evaporated milk.  A quick search of recipezaar came up with this one, and it worked just fine!

Homemade Evaporated Milk
2/3 cups dry milk powder
3/4 cups water

Mix well, use just like canned milk.
