We had enchiladas today using this sauce, and I must say that they were as good or better than any restaurant enchilada I have ever had. Make some this week; your husband will love them!
Homemade Enchilada Sauce
6 Tbsp oil
6 Tbsp cornstarch
1/2 cup chili powder
4 cups chicken broth
1 cup tomato sauce
1 tsp salt
2 tsp cumin
2 tsp oregano
4 tsp sugar
Heat oil and cornstarch together for one minute. Add chili powder, cook for one minute. Stir in broth and whisk well. Add remaining ingredients and then lower heat to simmer. Simmer until thick, about 30 minutes.
