Bruchetta Chicken
Bruchetta Chicken
1 cup flour
4 eggs, lightly beaten
8 chicken breasts
1/2 cup Parmesan cheese
1/2 cup bread crumbs
2 Tbsp melted butter
4 tomatoes. seeded and chopped
4 Tbsp dried basil
1 clove garlic, minced
2 Tbsp olive oil
1.2 tsp EACH salt and pepper
Dredge chicken in flour, then eggs. Place in a greased 9x13. Combine Parmesan cheese, bread crumbs and butter. Sprinkle over the chicken. Cover loosely with foil. Bake at 350 for 20 minutes. Uncover and bake 5-10 minutes longer. Meanwhile, combine remaining ingredients. Spoon over chicken after the 5-10 minutes additional cooking. Return to the oven for 3-5 minutes to warm tomatoes.

This recipe sounds delish!!! Can't wait to try it sometime. And the onion soup one!! I make so many of my own mixes, but don't think I have this one yet....thanks for posting them. Thanks also for stopping by my blog a few weeks ago. Just now getting back to our regular routine.....
