Curried Chicken  and Rice Soup

2 large carrots, chopped
2 stalks of celery, chopped
1 onion, chopped, 3/4 cup butter
3/4 cup flour
1 tsp. seasoned salt
1/2 - 1 tsp curry powder
3 (12 oz) can evaporated milk
4 cups chicken broth
2-3 cup chicken, cooked
2 cup cooked long grain brown rice

In a large saucepan, saute vegetables in butter for two minutes.  Whisk in flour, seasoned salt and curry until smooth.  Gradually add the milk.  Bring to a boil and stir two minutes.  Gradually add chicken broth.  Stir in chicken meat and rice.  Return to a boil and then reduce heat and simmer uncovered for 10 minutes.

Okay, I love these seasoning recipes. I have a challenge for you...maybe not a challenge if you know the answer already. I am looking for chicken and beef bouillon without any msg. In other words it has to be homemade. I boil the bones and make stock but I like it just a little stronger. I usually end up adding to it. After Thanksgiving I will boil the bones down for up to two days. It makes a wonderful, thick broth, but I want something for those times that I have used up my stock and need the flavoring (without using a can).

Oh-that's an easy one! It's not homemade, but wonderfully tasty and no MSG. Many of my recipes use it and were not the same before I discovered it!

Frontier Natural Chicken Broth Powder. I get mine through my food co-op, www.azure standard.com. Check and see if you may be on or near a delivery route... I googled it and found MANY websites that sell it. You'd have to compare prices, though, some seemed really high! I know that www.urbanhomemaker.com carries it. I spend $7.60 for a pound. A pound lasts us a little over a month.

I am not "moving" my recipes, just posting many more here than on my family blog. BTW, you can make the Roman Meal recipe without flaking it (until you get one...it's a good investment!) and just plan ahead and cook it 50-60 minutes then spice and serve as usual.

Thanks for adding me to your sidebar! I have to learn how to do that...I have NO knowledge of making the blog personal. I have categorized my posts on my family blog, but don't know how to put categories on the sidebar! I'd put these into category like "side dish" "breakfast" etc... I'm a computer dunce, really!

Anyway, thanks for the encouragement, and I'll add some more "alternate grain" recipes soon!
