Soft Banana Cookies

These are what I made for breakfast today.  I thought you might enjoy the recipe.  Please make sure to use regular whole wheat flour, not pastry as I first wrote.  Most of the time pastry flour is used for cookies, but not in this case!

 

Soft Banana Cookies

 

3/4 cup butter

1/2 cup raw sugar

1 egg

1 tsp. vanilla

1 cup mashed banana

2 cups whole wheat flour

1 tsp. baking soda

Opt. 1/4 cup chopped nuts

 

Cream butter and sugar.  Add egg, vanilla, and bananas.  Stir in baking soda and flour.  Drop by tablespoonfull onto lightly oiled cookie sheet.  Bake about 12 minutes at 350, just until edges are browning.

 

Though not the prettiest cookie, these are very tasty, even without a lot of spice!
