Truckstop Cinnamon Rolls:
5 cups warm water
1 Tablespoon yeast
10-13 cups flour
1 Tablespoon salt
3/4-1 cup brown sugar
Mix all ingredients and knead for 10 minutes. Let rise in an oiled bowl for 2 hours. Punch down and roll out into a rectangle. Sprinkle with cinnamon and 1 1/2 cups brown sugar, sprinkle with melted butter, roll up and cut into 1 1/2 inche thick. Place in a 9X13 baking dish or cookie sheet and cover with plastic wrap. Let rise 20-30 minutes. Bake at 400 degrees for 30-45 minutes in upper 1/2 of oven..
