Frosted Pumpkin Muffins:
makes 1 1/2 dozen
1 package (16oz) pound cake mix
2 eggs
1 cup canned pumpkin
1/3 cup water
2 teaspoons pumpkin pie spice
1 teaspoon baking soda
1 can (16oz) cream cheese frosting
1/2 cup finely chopped pecans
In a large mixing bowl, combine the cake mix, eggs, pumpkin, water, pumpkin pie spice and baking soda. Beat on medium spee 3 minutes.
Fill greased or paper lined muffin cups 2/3's full. Bake at 350 for 18-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks to cool completly.
Frost muffins. Sprinkle with pecans if desired. Store in refrgerator.
