Sweet and Sour Pork:
serves 4
1 tablespoon cornstarch
1 tablespoon soy sauce
1 pound pork loin cut into 1 inch cubes
2 Tablespoons vegetable oil
1/4 cup water
2 medium carrots, thinly sliced
1 medium onion, cubed
1 medium green pepper, cubed
1 cup sweet and sour sauce
1 (8oz) can pineapple chunks, drained
Blend corn starch and soy sauce in a bowl. Add pork and toss to coat. Brown pork in hot oil and stir in water. Cover and simmer 20 minutes, stirring occassionally. Stir in veggies and sweet and sour sauce. Cover and simmer for 10 minutes longer. Add pineapple and heat through. Serve over rice.
