• Wednesday, November 14, 2007 - Sunrise ~ Wed!

The sun is coming up.  What do they say about a red sky in the morning?  This one is red, pink, blue, and shades of gray.  Really beautiful!

Today I think I get to stay home!  YEA!!!  I am so tired of running.   I am such a homebody.  A home school friend is coming out so her son can milk a cow tonight.  That should be fun.

MJ is already through with school for today.  He did extra yesterday so he would be done.  I am going to have him help me get ready for Thanksgiving.    He can do some cleaning and straightening and some food preparation.  I wonder if he could use the vita mix to grind wheat for me.   He is my most organized and does the best at straightening and cleaning.  Really better than I do when he wants to.

I hope to get bread made just to eat.  Since I didn't have wheat for a couple of weeks we haven't had bread. I made biscuits yesterday, but they are long gone.   I will do a pan of rolls and a loaf of bread today.  Maybe double that and freeze some for brown and serve rolls.  I wish I had more freezer space!   I don't like being short a freezer.   I am spoiled.  My DH is working on building us a walk in freezer.  It is slow going with the time change and work.  I am trying to be patient.

Speaking of being patient I still haven't heard anything from NM on W.   I did call yesterday morning before I went to town.  The case worker wasn't in the office yet.  I left a message, but she didn't return my call.  I will e calling again this morning.  Since NM is an hour behind TX  it works well for me to call after chores.   I am at a point I want to know but don't.  I will be really sad if the answer is no.  I know it is God shutting the door, but I will still be sad.  I don't even want to go to what needs doing if he says yes.  That will require a lot more prayer as our local adoption worker isn't on board with adopting out of state, or adopting kids in general.

If I get my cornbread made today, and frig's cleaned out I will have accomplished a lot.  That on top of making bread to eat and such.   MJ is really good at cleaning frig's.  He does an awesome job.  I will give him that job.  Then he can help me bake bread.  Maybe the girls will get in gear and finish school early.  They are excited about Thanksgiving.  Today is our last day of school until after Thanksgiving.  They get to help do the preparing for that.  They can't wait!

OK off to do chores, all have a blessed day!

Thank you for stopping by my blog, I answered your question on your comment. I plan to come back and visit you soon and read more of your blog. I was wondering if you would share your recipe for biscuits. I haven't been able to find a good recipe that makes a nice light biscuit, they are always dense and heavy.
Blessings,

• Wednesday, November 14, 2007 - Biscuit Mix

Posted by mom2countrykids
First I will copy the recipe as I have it, then will share my changes as my eating has evolved.

8 C. Flour
1/3 C Baking Powder
2 teaspoons salt
8 teaspoons sugar (optional)
1 cup dry milk
1 cup shorting.

To bake mix 1/3 cup water to every cup of mix. Bake at 4.25

Now to the changes.

I never use sugar, never have. I use WW flour now, fresh ground. I keep my extra mix in the frig or freezer to keep the flour fresh. I don't use dried milk. We always have milk around here. I also use coconut oil instead of shortening. I do think you need just a little less coconut oil than it calls for. I have been adding extra flour to mine as I mix to cook to get the right texture.

I mix mine in my kitchen aid. Takes longer to grind the wheat than to finish mixing the mix.

Thanks for posting this for me. I will have to give it a try. I do have coconut oil on hand but not fresh ground flour yet, I am still working on getting the attachment for my kitchen aid. Patience is a virtue, right? I will let you know when I get to try it and how it goes.

• Wednesday, November 14, 2007 - Kitchen Aid Grain Mill

Posted by mom2countrykids
This is a huge waste of money! I bought it and tried and tried to use it. I finally figured out that it doesn't grind the wheat fine enough to make good bread. It is more like cracked wheat than flour.

Use the money that you would to buy that toward a vita mix. I use it to grind my wheat and LOTS of other things every day.

About Me

Just want to share the joys and tears of living in the country with others that understand them both. I am mom to 5 children. Two biological and three adopted. We are praying for one more adopted soon. We live 40 miles from town on 117 acres. My days are full of homeschooling children and dealing with livestock. Life is never dull or boring or "normal" what ever normal is. I ramble on here often, some times more than once a day as this is my main form of socialization with adults during the day. Hope to make some new friends here.
